Instead of going with one of the programmed up-and-down "hill climbing" programs on the elliptical trainer, I'd recommend that you just set it at a high incline and go. You'll up your calories and you may find that just going "uphill" will stress your knees than switching back and forth.
You might also want to try just the treadmill at a high incline. Set it to 15, start with a low speed, and then work your way up. Boring as heck, so bring an iPod or your music player of choice. I started shedding weight pretty fast once my trainer had me switch from the elliptical trainer to the treadmill at a high incline.
